Product Overview
Cochineal red, also known as Edible Red 102 (Japan), Edible Red 7, Lipstick Red 4R, Crimson, Brilliant Scarlet, is an azo dye used in aqueous solutions. Its chemical name is 1-(4'-sulfonic acid-1'-naphthylazo)-2-naphthol-6,8-disulfonic acid trisodium salt. It is an isomer of betacyanin, with a molecular formula of C20H11O10N2S3Na3. Cochineal red is one of the most widely used and consumed azo dyes in our country. Recent reports indicate that cochineal red, like Sudan Red I, is an azo dye that can metabolize into mutagenic aromatic amines. The usage scope and limits in our country are the same as for betacyanin.
Cochineal Red Production Process
Chemical synthesis: Produced by diazotizing 1,4-amino naphthalene sulfonic acid and coupling it with G salt (β-naphthol-6,8-disulfonic acid sodium or potassium salt) in an alkaline medium. Cochineal red is an azo compound.

Cochineal Red Applications
Cochineal red as a food colorant can be used for coloring juice drinks, prepared wines, carbonated beverages, candies, pastries, ice cream, yogurt, etc. It is not suitable for use in dried meats, meat jerky, seafood, etc., to prevent the masking of poor-quality or spoiled meat. According to the "Sanitary Standard for Use of Food Additives" (GB2760-1996), the usage scope and maximum amounts for cochineal red are the same as for betacyanin. It can also be used in candy coatings and soy milk drinks with a maximum usage of 0.1g/kg; in red sausage casings with a maximum usage of 0.025g/kg and a residual amount of 0.01g/kg.
