Product Description
Amaranth, also known as Acid Red 27, Food Red 2, or Celosia Red, is an organic compound with the chemical formula C20H11N2Na3O10S3. It is a water-soluble azo dye. In China, Amaranth can be used to color fruit-flavored drinks, fruit powders, fruit syrups, sodas, flavored liquors, candies, cakes, red and green noodles, canned foods, concentrated fruit juices, and pickled plums. On October 27, 2017, the International Agency for Research on Cancer listed Amaranth as a Group 3 carcinogen. Amaranth appears purple in concentrated sulfuric acid, pink when diluted; bright red in concentrated nitric acid; and brown with black precipitates in hydrochloric acid. Due to its sensitivity to redox reactions, it is unsuitable for fermented foods. High pigment content can lead to a tendency for the powder to appear black. Differences in powder color may occur due to the state of the powder or moisture, but solutions with the same concentration will have consistent color. Amaranth has relatively weak coloring strength.

Amaranth Application Scenarios
According to China's "Hygienic Standards for the Use of Food Additives" (GB2760-1996), Amaranth can be used in hawthorn products, cherry products, fruit-flavored beverages, juice drinks, sodas, flavored liquors, candies, cakes, red and green noodles, canned foods, concentrated fruit juices, pickled plums, and shrimp chips, with a maximum usage of 0.05g/kg. When mixed with other synthetic dyes, use should be proportionate to the maximum allowable amount. The usage amount for red and green noodles can be doubled, and the amount of fruit-flavored powder dye should be 50% of the dilution factor. Not to be used in infant formula.
