Product Overview

Caramel color, also known as caramel, is a complex mixture with the English name "Caramel." Typically, it appears as a dark brown to black liquid or solid with a caramel aroma and a slightly bitter taste.

Caramel color is a widely used food additive primarily for coloring foods like candy, beverages, and soy sauce. It is a natural colorant formed through the Maillard reaction of sugars at high temperatures. Due to its natural, safe, and stable properties, it is extensively used in the food industry.

Caramel color is permitted for use in beverages and other foods both domestically and internationally. In China, caramel color is regulated by GB2760 "National Food Safety Standard for Food Additive Use" and the national standard GB8817 "Food Additive Caramel Color."

Caramel color can be categorized into three types: plain caramel, ammonia caramel, and ammonium sulfite caramel. Plain caramel has the strongest coloring power but generates some sulfides during production, requiring careful control of the dosage. Ammonia caramel and ammonium sulfite caramel do not produce sulfides during production, but their coloring power is relatively weaker.

Caramel Color Production Process

Caramel color is produced by the reaction of sugars such as glucose and fructose at high temperatures. The production process mainly includes syrup preparation, heating reaction, and post-processing. During the heating reaction, sugars undergo the Maillard reaction, producing colored substances. By controlling reaction temperature, time, and other parameters, the color and coloring strength of caramel color can be adjusted. Post-processing involves filtration, drying, and other operations to obtain qualified caramel color products.

Applications of Caramel Color

  1. Candy Coloring

Caramel color is one of the commonly used colorants in candy production. It can provide vibrant color and a good taste to candies, such as chocolates and lollipops.

  1. Beverage Coloring

Caramel color is also widely used in beverage manufacturing. Drinks like cola and juice contain caramel color, which enhances the visual appeal and attractiveness of the product.

  1. Soy Sauce Coloring

In soy sauce production, caramel color is an important colorant. Adding the right amount of caramel color gives soy sauce a reddish-brown hue, improving its quality and taste.

  1. Others

Caramel color is widely used in soy sauce, vinegar, cooking wine, sauces, pickled products, baked goods, candy, medicine, carbonated drinks, and non-carbonated drinks, effectively improving product quality. Suitable for soy sauce, vinegar, cooking wine, sauces, pickled products with an addition rate of 2-5%.
