Product Overview
Gardenia Blue is a natural edible pigment refined from the fruit of the Gardenia jasminoides Ellis through a biological fermentation process. It is widely used to color hard candies, pectin, agar, pudding, marshmallows, cookies, sponge cakes, cake mixes, cream, ice cream, dairy products, vegetables, canned green peas, beverages, and juices, serving as a blue colorant.
Gardenia Blue Production Process
The preparation of Gardenia Blue can be summarized into two main methods:
One method involves directly adding crushed gardenia fruit to the culture medium, completing both hydrolysis and synthesis in one step. This method often results in lower product quality and waste of gardenia yellow pigment.
The other method, known as the two-step process, separates the hydrolysis and synthesis of Gardenia Blue to improve pigment quality. Although this method requires more steps, it enhances both the quality and yield of the pigment.
In the direct fermentation method, hydrolysis and synthesis occur simultaneously. While simple, this method often produces a dull, greenish-blue or purplish product with a low yield. The two-step method improves on this by separating the hydrolysis of gardenia glycosides from the synthesis of Gardenia Blue, thus improving quality and yield. However, the two-step method still involves intermittent operations, which can be less suitable for continuous industrial production.
Gardenia Blue Application Scenarios
Natural blue pigments are rare in nature, and Gardenia Blue is one of them. Compared to synthetic colorants like Brilliant Blue and Indigo, it is natural, compatible with the human body, and highly safe. It is a natural colorant worth promoting.
Gardenia Blue can be used in convenience foods, jams, fruit-flavored beverages, fruit and vegetable juices, candies, pastries, flavored liquors, frozen desserts (excluding edible ice), pickled vegetables, fried nuts and seeds, grain product fillings, baked goods fillings, seasonings, protein drinks, solid drinks, and puffed foods.
